Tomato pie, tomato soup,tomato gravy—you say tomato, I say 'mater. They make the summer heat worth the sweat. (Though, as we all know, Southern women don't sweat—we glisten.) Tomatoes are starting to appear on plants all over my yard, and I am on the hunt for all kinds of tomato recipes. When we got married six years ago (Dave says it seems like only sixty:), I asked the friends and family who hosted my bridal tea to include a request for recipes in the invitation. And I got a recipe box full of great ones—from our friend Billie Darby's breakfast casserole to my sister-in-law Linda's sweet potato casserole to my cousin Vivian Ann's tomato pie. (Hey, VA, mind if I post it here?) There's no better gift you can share with people who love food. So if you have time to post and share, please do!
P.S. Two of my most memorable bridal-tea recipes? This from my cousin Susan: "Marry a man that can cook." Susan, I did. And I use that recipe every day. And this one from our friend Coby, who decided to have a little fun with the recipe swap and sent this to the shower by his wife, Teresa. (I'm reprinting it as he wrote it. "One egg from chicken" is my favorite part.)
COBY'S FAMOUS BOLOGNA
2 pcs Bryyan thick-sliced bologna
1 egg from chicken
2 pcs cheese, Kraft, sliced
2 pcs bread lightly toasted
Serve with white milk and salt and pepper. Chips of your choice. (I prefer Doritos.)
And just let me say this about the recipe from Coby: You are the only one who has that recipe. Cherish it.!!!!! He does not give out his recipes to just anybody.

Ha! Yes, Coby is indeed the next Food Network star! And If you and I spend much more time together at my house, there won't be any maters to pick because we'll eat them ALL!

SCALLOPED TOMATOES
4 slices white toast
4 Tbsp. butter
1/2 tsp. garlic salt
1 tsp. grated onion
1 tsp. salt
1/4 tsp. pepper
2 1/2 C. home-canned tomatoes
Spread toast with 2 tablespoons butter; sprinkle with garlic salt and cut toast into cubes. Combine tomatoes, onion, salt, and pepper. Place cubes in greased casserole; add tomatoes. Pour remaining melted butter over top. Bake in 375° oven for 20 minutes. Yields 6 servings.
