Granted, this is not a daily dish on my Weight Watchers plan:) But it sure is good! (I use Hellman's Light mayo and tell myself it's now Diet Tomato Pie.) I've tried other versions, but I always come back to this one, which my cousin gave me for my recipe box when Dave and I got married. Thanks, V.A.!
Ingredients:
* 9" deep-dish pie shell (baked 10 minutes)
* 2 large tomatoes, peeled and sliced
* Salt and pepper to taste
* 1 lb. bacon, cooked and crumbled
* 1 c. mayonnaise
* 1/2 c. chopped green onions
* 1 1/2 c. grafted cheddar cheese
Directions:
Layer tomatoes in crust; salt and pepper to taste. Sprinkle bacon crumbles and onions next. Stir together mayonnaise and cheese, and spread on top. Bake at 350 until brown (30 minutes). Let set for about 10 minutes before serving.
